Easy lentil stew
Delicious lentil stew for 4
• olive oil
• garlic if you like (I always skip it)
• one big onion
• 1 tsp turmeric
• 2 tsp of your favourite spices e.g. garam masala
• 1 tsp chili powder
• 2 tsp cumin
• 2 tins of mashed tomatoes
• 2 dl red lentils
• approx 1 dl water
• vegan bouillon cube (esim. Reformi luomu)
• 1 tin of coconut milk
• 1/2 lemon juice
1. Start by frying the onions in olive oil on the pan.
2. Add spices. If you’re like me and don’t like your food too spicy, you can add spices as you go along and not everything at once.
3. Pour the mashed tomatoes and lentils. Remember to rinse the lentils. Pour one cup of water in and add the bouillon. Let it boil for a while, and stir.
4. Add coconut milk and let the stew boil. Lower the temperature and let it boil for about 30mins until the lentils are cooked.
5. Check the taste and add the lemon juice.
Serve the stew with coriander or basil if you like.
You can also eat the stew with rise, pasta or potatoes. It works with all of them.
